When it comes to appreciating food, the Singaporean palate ranks very highly. The Singapore food culture comes from a collection of cultures, tastes and culinary exploits and there isn’t a more popular way to enjoy this rich culture of flavours than at Singapore’s greatest culinary institution – the hawker centre!
Makansutra has identified 15 of some of the best and most popular hawkers who have been dutifully dishing out their cult signature flavours for decades. No matter what their specialty, these public hawkers are culinary legends in their own right. The pride in their work, sometimes responsible for the long queues, are simple inconveniences for the palatable pleasures they eventually serve.
These legends are found in 12 hawker centres – a uniquely Singaporean creation where our hawkers thrive in hygienic and functional environments. Today, many centres have been transformed – some with tropical garden settings, others with a hint of Asian architectural influence, still others with the popular al-fresco dining.
